From any Agenda Fusion view, tap open the main menu (tap the red whirly AF icon in the bottom left), choose Options, then open the top drop-down menu to choose Display. In that list of settings find "Category/Status Coloring" and tap open the drop-down options for that setting and choose one that includes "Text:category" in it.
